Production of Extracellula Polysaccharides by Candida mucifera

Abstract: Candida mucifera, CCY 29-170-1, when cultured in liquid media with various carbon sources, produced D-mannose-dominating extracellular polysaccharides; the only exception was the medium with beer wort, where the dominating sugar component was D-glucose. All the polysaccharides were heterogeneous upon electrophoresis. The protein moiety in the polysaccharides varied from 3 to 16 % and the content of phosphorus from 0.5 to 1.1 %. The lowest limiting viscosity number (14 cm3 g-1) was found with the D-glucose-dominating polysaccharide and the highest one (67 cm3 g-1) with the D-mannose-dominating polysaccharide.
