Abstract: The molybdate-catalyzed epimerization of D-glucose in aqueous solu­ tions carried out at 120—150°C leads to a mixture of D-glucose, D-mannose, D-allose, and D-altrose, from which D-glucose and D-mannose are removed by yeast fermentation while D-allose and D-altrose are obtained in the ratio 3:2 in 14—17% yield.
