Biosynthesis of β-glucans by wheat enzyme extracts

Abstract: Particulate and soluble enzyme extracts were prepared which catalyzed the incorporation of the glucosyl from UDP-Glc into ß-glucans. The reactions required divalent ions, preferentially Mg²⁺. By partial hydrolysis of these glucans and structural analysis of the disaccharides thereby produced, it was shown that the glucans were essentially ß_1→4 linked (cellulose structure) when the substrate UDP-Glc was incubated at low concentration (10^-5 to 10^-6 M). The glucans were mainly ß_{1→ 3} linked (laminarane structure) at higher substrate concentration (10^-4 to 10^-3м).
