Aminolysis of socrose. II. Reaction of certain oligosaccharides and polysaccharides with aqueous ammonia solution

Abstract: The title reaction was studied when caried out as described above in the case of sucrose, and in the presence of 0.625% (NH4)3PO4. Pyrazine and iidazole fractions identical with those obtained from sucrose were obtained from the following carbohydrates: (in decreasing order as regards yields): melase of various origins, lactose, cellobiose, hydrolysed starc (with optimal temp. of reaction for all 255〈), starch of various origins, and cellulose (optimal temp. 250°). The dialdehyde of starch(Sloan et al., CA 51, 1633b) yielded under the same conditions only 2,3-dimethylpyrazine (1% yield) and imidazole (4.3% yield) at the optimal temp. 225°; a reaction mechanism, presuming the intermediary formation of erythrose and glyoxal by hydrolysis, is suggested for the formation of these products.
