The relation between aging of gelatin solutions and their coagulation with tannin

Abstract: The degree of aggregation of particles formed during coagulation with tannin increases with decreasing temp. and vol. of H2O for dissolving gelatin and with aging of gelatin solns. It is faster the smaller the vol. of lower-temp. H2O used to dissolve the gelatin and was detd. relatively by measuring the light absorption. The wt. relation of tannin to gelatin necessary for optimum colgulation depends on the conditions of the prepn. of the gelatin soln. The relations are important in tannin-gelatin clarification of fruit juices.
