The reaction of tannin with gelatin

Abstract: Electrophoretic mobility of complexes formed by the interaction of tannin (I) and gelatin (II) is described. If the interaction occurs at pH 2.27 when II mols. are without elec. charge, the electrophoretic mobility of I-II complexes does not depend on the ratio of I:II in the range 0.1:1.0 and is essentially no different from the electrophoretic mobility of II alone. The electrophoretic mobility increases with increasing ratio of I:II if the interaction is at pH 7.33 when II mols. are neg. charged. The no. of dissocd, groups and their dissocn. consts, were detd. Equations of the relation of I and elec. charge of II as a function of pH are given. From the detn. of electrophoretic mobility and elec. charges of mols. of I and II, the amt. of I bound on II was calcd, at pH 7.33. These values at ratios of I to II 0.5 and 1.0 agree with the values detd. by extrapolation of the dependence on pH of the amt. of bound I in the flocculation area.
