Study of boiling hops with a radioactive indicator

Abstract: The possibility of formation of Ca salts of α- and β-bitter acids (I) during boiling of hops with Ca45 indicator was studied and compared with standard methods applying extn. and dialysis, in addn. to flame photographic and spectral absorption analyses. Ca salts of I are not formed during boiling of hops.
