Abstract: In com. size batches lactic acid fermentation was carried out with the addn. of corn ext. to 0.3% residual sugar in 87 hrs., while the control test without corn ext. took 126 hrs. The shape of lactic acid bacteria changed, showing a greater no. of longer units and longer chains, especially in the third day of fermentation.
