Vegetable amylases

Abstract: Ungerminated cereals contain α- and β- amylase. The diastatic complex of ungerminated wheat, rye, and barley consists of large quantities of active β-amylase and traces of inactive α-amylase; oats, corn, and red millet contain both amylases in the active form.
