Quantitative and qualitative changes of pectin matter from wild apples

Abstract: Core and pulp samples of wild apples (Malus sylvestris), grown very extensively in Slovakia, were tested for pectin changes during 1 year of storage. The ratio of the apparent value (direct decarboxylation) to the actual amt. of pectin remained const. in the same sample, so that it was possible to make a quick approx. detn. of pectin. During storage the amt. of total and insol. pectin in the pulp decreased more rapidly than in the core. The viscosity decreased 83% in the pulp and only 26 and 42% in the core. An intense degradation process in the pulp and a higher-quality pectin conservation in the core are indicated, which is of technological importance. The fruit contains, relatively, a considerable amt. of good-quality pectin (1.0 to 1.5%).
